Ruby Glazed

Inspired by the concept of amuse-bouche, a single bite designed by the chef to awaken the palate before the main course. Ruby Glazed captures that moment with a vibrant composition that unites lemon drizzle with an almond bite and a metal sheen. Liquorice-sweet star anise chafes beautifully against a raspberry coulis accord, made sensuous with orange blossom. A saffron-inflected vanilla renders the dry down golden and warm.
